Calamares a la romana (Deep-Fried Squid)

The secret to frying squid is to ensure that the heat of the oil is at the optimum heat, 350-400°F (180-200°C) and that they are cooked for no more than 1 minute. This will ensure that the squid remains tender without becoming rubbery (the smaller the squid, the more tender they are also).

Pour oil into a frying pan to a depth of 3 inches (7.5cm). Whilst it is heating to the above temperatutre, slice the squid bodies into rings of about a 1/4 inch thickness. Take the rings and first dip into the flour to dredge, then into the egg mixture to coat and next into the breadcrumbs before placing into the hot oil.

Fry squid for 1 minute. Drain on paper towels and serve immediately.


Oil for frying (preferably sunflower or vegetable)
2 lb (1 Kg) fresh squid, cleaned with skin removed
Flour for dredging
4 eggs mixed with 2 tablespoons of water
Breadcrumbs for coating
