Pinchos Morunos (Moorish style
kebabs)
Serves 8
Combine all ingredients except pork in a large glass or ceramic bowl. Add pork and stir to coat well.
Cover and refrigerate overnight Start a fire in a charcoal gill. Drain pork, putting the marinade to one side.
Thread pork cubes on skewers. In a small pan, bring marinade to a boil. Remove from heat, then set aside. When coals are hot,
cook pork to desired colour, basting frequently with the marinade.

1 teaspoon chopped fresh thyme
1 teaspoon chilli powder
1 teaspoon paprika
2 teaspoons ground cumin
1 teaspoon freshly ground pepper
1 teaspoon salt
1 ˝ teaspoons chopped parsley
1-1 ˝ lb / 500g-750 lean pork cut into 2 cm cubes
